What I Ate Last Week

Last week I ate/cooked the following:

(Sunday through Saturday)

  1. Scrambled eggs with quinoa, salsa, garlic salt and lemon pepper
  2. Toast with butter and honey
  3. Avocado toast
  4. Popovers from Marin Mama Cooks
  5. Quinoa Breakfast Scramble by Wendy Polisi

  1. Bangers and Mash by Sorted
  2. Butternut Squash Soup from The Wicked Noodle
  3. Mediterranean Chicken & Chickpea Bowls from Iowa Girl Eats
  4. Mozzarella Stuffed Meatballs from Giada at Home with doctored tomato sauce

Snack Ideas/Dessert

  1. Ginger Frozen Yogurt from America’s Test Kitchen
  2. French Apple Cake from America’s Test Kitchen

Overall: This past week we had my mom visiting, so we ate out more than normal. I chose things that I knew would mostly be good. The butternut squash soup was a disappointment, partially because my butternut squash was small and therefore the texture was weird, too thin. Bangers and mash, Mediterranean chicken bowls, and Giada’s meatballs are standards at our house and we have eaten them many times. I also love the popovers and the quinoa scramble, I use it as my go to recipes. I did not love the ginger frozen yogurt. I like ginger in most forms but did not really want it in my ice cream so to speak. The french apple cake recipe I have had for years and have yet to bake, but it was a surprise hit. We ate it after our date night because it spent the day cooling, not only did it kick of my holiday baking, but it was just delicious. I spent a good part of this week watching the Great British Bake-Off and I would describe it as more of a pudding than a cake in the traditional sense. Either way it was gone that night, which is uncommon in our house.
