Saucy Eggs

Here is Chrissy’s version.

I first stumbled upon a version of eggs in tomato sauce was in Chrissy Teigen’s book Cravings, which inspired this recipe. I was an immediate fan, I love the creamy eggs against the bright tomato sauce.

I found that at the time I did not go back and try to recreate it until recently. I am working on gathering my favorite recipes from that book into a post, and in the process I am adapting ones that I feel could use a bit of improvement and I finally feel ready for it.

I also would be remiss to say that simply cooking an egg or two in extra tomato sauce, if you have any leftover is always a good idea. Below I simply cooked an egg in the sauce and topped it with dry oregano.

My version requires a bit more effort, but I believe it is still completely worth it.

Saucy Eggs

  • Servings: 3-6
  • Difficulty: Easy (about 25 minutes)

Ingredients

  • 1/3 cup olive oil
  • 1 cup chopped onion
  • 3 cloves of garlic
  • 1-28 oz. can of tomato sauce
  • 3 teaspoons dried oregano
  • 3 tablespoons sugar
  • 1 tablespoon grated parmesan
  • 1 1/4 teaspoon salt, divided
  • 1/4 teaspoon ground pepper
  • 6 eggs
  • fresh oregano for garnish
  • buttered toast for dipping

Directions

  1. In a large sauté pan add olive oil and heat over medium heat.
  2. Add chopped onions and cook until soft and starting to turn golden, around 6 minutes.
  3. Grate in cloves of garlic and cook until fragrant, around 1 minute.
  4. Add canned tomato sauce, oregano, sugar, parmesan, 1 teaspoon salt, and pepper. Adjust seasoning to taste.
  5. Increase heat to medium high and bubbling.
  6. Crack eggs into sauce and reduce heat to medium.
  7. Sprinkle remaining salt atop each egg.
  8. Cook until egg whites are fully cooked and inner yolks are still soft, around 8 minutes, potentially using a lid to cook the top of the eggs.
  9. Remove from the heat.
  10. Add fresh oregano to garnish and serve with buttered toast.
This recipe is inspired by Christy Teigen's cookbook Cravings. I typically wait until I see one piece starting to turn golden around the edges then I add the garlic. Also using a lid can end up overcooking the eggs to use with caution, but I have found it hard to fully cook the whites otherwise, you may want to turn down the heat as you do so.
